Last winter I bought a very delicious ginger lemon honey at a local artisan fest. It is zesty, sweet and comforting all at the same time. I have been using it in my tea, lemonade, and bake goods. I decided that I needed to make some before I finished this jar so I can replicate it. This is what I came up with. I try to make all my recipes with the ability to adjust the amount easily. This recipe calls for 1 inch of ginger per cup of honey and 1/2 a lemon per cup of honey. I steeped this for about 1 day but it can probably be steeped for less time. The longer you steep it the stronger the flavor. If you don’t have time to steep it for several hours then double the amount of ginger. The lemon will impart flavor easier than the ginger and does not necessarily be increased. I would recommend at least an hour of steeping. However, it tasted delicious with just the 10 minutes of simmering. It have a slight hint of ginger and honey. This is a very soothing honey. It is easy to make and is a great gift.

Ingredients
1 C honey, local honey
1 – 2 inches ginger, sliced
1/2 a lemon, sliced
Proportion adjustment:
1 inch ginger per cup of honey.
1/2 a lemon per cup of honey
NOTE: if you don’t have time to let the ginger steep for 8 hours or if you want a strong ginger taste, then double the amount of ginger.
Directions
Combine honey, ginger and lemon. Simmer for about 10 minutes. Watch this carefully, mine almost boiled over. Let this sit for 1/2 hour and taste. The lemon imparts flavor more quickly than the ginger and once you feel it has enough lemon flavor you can remove the lemon. I allowed my lemon to steep for 1 hour. The slice lemon can be used as a candied lemon. I left the ginger to steep for about 8 hours. Strain the honey into a jar. The ginger can be used in cooking or baked goods or eaten as is.
